Minamiuonuma City, where Ishiuchi Maruyama is located, is one of the snowiest areas in Japan.
The abundant natural snow brings many benefits, including skiing, and also gives rise to fermentation to preserve food during the winter and to natural refrigerators called "snow rooms." The accumulated snow also produces abundant meltwater, which has been used to actively produce rice and sake, making Minamiuonuma a region that produces high-quality brand rice and famous sake.
Ishiuchi Maruyama's new store, Rokka, which overlooks the snowy landscape of Minamiuonuma City, is themed around "experiencing the food culture of a snowy country." The store offers a menu using one of Japan's leading brand rice brands, Minamiuonuma Koshihikari, as well as local sake and koji (malted rice) from Hakkaisan, allowing customers to enjoy the food culture of a snowy country that revolves around the "snow" and "food" unique to this region.
